甜味釋放得較慢,后味微苦,穩(wěn)定性高,不發(fā)酵,具有增香效果,但不習(xí)慣者會(huì)感不快。多用于調(diào)味品、涼果、糖果及餅干等。在復(fù)合調(diào)味料生產(chǎn),常按甘草甜素:糖精鈉=3~4:1比例,再加適量蔗糖可使甜味效果好,并緩解鹽的咸味、增香;用于糖果,多與蔗糖、糖精和檸檬酸合用,風(fēng)味獨(dú)特、甜味更佳。

• 不引起血液葡萄糖值上升,是肥胖、糖尿病者的理想甜味劑。
• 長(zhǎng)期食用不蛀齒。
• 部分糖醇具有潤(rùn)暢通便作用,程度差異如下:
• 赤蘚糖醇- 麥芽糖醇+ 木糖醇++ 山梨糖醇+++ 甘露醇+++ 
• 具有溶解水吸熱性能,入口有清涼感。
• 與其他甜味劑比較:甜度低,熱值低,吸濕性好,耐熱耐酸,不發(fā)生美拉德反應(yīng),適合烘培。

(二)糖醇類各自特點(diǎn)
1、木糖醇
與強(qiáng)力甜味劑復(fù)配,產(chǎn)生協(xié)調(diào)增效作用,并能掩蓋其不良后味;與金屬離子有螯合作用,可作抗氧化劑的增效劑,有助于維生素和色素穩(wěn)定。

2、山梨糖醇
在烘培食品中有保濕保鮮作用,可用作淀粉的穩(wěn)定劑和果品的保香劑、抗氧劑和保鮮劑等,防止食品糖鹽等結(jié)晶析出,可維持甜、酸、苦味強(qiáng)度平衡和增加食品風(fēng)味。

3、甘露醇
甘甜爽口,無(wú)吸濕性,可用于膠姆糖防粘。

4、赤蘚糖醇 
吸濕性小,熔點(diǎn)低。用于披覆食品(糕點(diǎn)等),可防潮保濕,延長(zhǎng)保質(zhì)期。

5、麥芽糖醇
有保香功能,增加糖果、飲料芳香氣味,并能加強(qiáng)糖果透明性;粘度較大,也可作增稠劑。

6、異麥芽酮糖醇
不吸濕,與其他強(qiáng)力甜味劑發(fā)生協(xié)調(diào)增效作用,并掩蓋其不良后味。
